Bacon Wrapped Cacao Crusted Fillet Mignon- this indulgent cut of beef melts like butter in your mouth with a coating of a cacao rub and wrapped in bacon. Treat yourself with this dinner for two on Valentine's Day!  

For Filets

2 tbs Ghee

2 strips Bacon I used local pork belly (Whole30 compliant)

2 6oz portions Beef Tenderloin

 

For the Rub

1/4 cup Choffy

1 tbs Black Pepper

1 tbs Sea Salt

1 tsp Ground Mustard

1/2 tsp Dried Thyme

1. Preheat oven to 400 F

2. Combine rub ingredients together

3. Rub fillets liberally with the mixture until it is evenly coated

4. Wrap the fillets with bacon and secure with tooth picks

5. In a cast iron skillet (or oven proof skillet), heat the skillet on medium high heat until it appears to be smoking

6. Add the ghee and quickly but carefully add the steaks (facing away from you so you don’t splash yourself)

7. Sear the steaks for about 45-60s on each side

8. Turn off burner and transfer to oven to finish cooking (about 10-15 minutes) or until desired doneness

9. Allow the steak to rest for 10 minutes before eating.

10. Enjoy!

TIP: Steak is VERY temperature sensitive when cooking and does best when it is at room temperature prior to searing. Therefore, take steaks out of the fridge about 30 minutes before cooking
