Wow, oh wow! These things you can't get enough. Be warned, if you make these superfood seed and nut bars, you won't be able to stop eating them!
Ingredients for the Bottom Layer:
- 1 1/2 cups, pitted and chopped Dates
- 2 tbs Goji Berries
- 1/2 cup Almonds
- 1/2 cup Chopped Walnuts
- 1/4 cup Hemp Seeds
- 1 tbs Cocoa Powder
- 1 tbs Choffy
Ingredients for the Top Layer:
- 1/2 cup Almond Butter
- 1/2 cup Chocolate Sesame Spread
- 1/4 cup Honey
- 1 tbs Coconut Oil
Ingredients for the Toppings:
- Pepita Seeds
- Chia Seeds
- Sunflower Seeds
- Goji Berries
Instructions for the Bottom Layer:
- In a food processor add dates and goji berries and pulse until a paste is formed
- Add cocoa powder, coffee, almonds, and walnuts. Blend until combined
- Pour into a parchment lined casserole dish
- Press down on mixture until you have an even layer
- Freeze for 20 minutes
Instructions for the Top Layer:
- While the bottom layer is freezing, heat a sauce pan on medium heat
- Melt coconut oil in pan, then add honey, chocolate sesame spread, and almond butter
- Stir continuously until all ingredients have melted and smooth. Remove from heat and allow to cool for 15 minutes
- Spread almond butter mixture on top of the bottom layer. Sprinkle with desired toppings and press into top layer to adhere
- Freeze for 90 minutes
- Cut into 9-12 bars and snack!
