Ceremonial cacao is whole paste melted into water and drunk thick — an occasion, and a good one. What we make is the same bean roasted and ground for brewing, so you strain it and drink it light. It is the version that works on a Tuesday morning, several cups deep, without feeling like you have eaten a meal.

Ceremonial cacao is the whole bean, unstrained
Paste or finely ground beans stirred into hot water and drunk entirely — fats, solids and all. It is thick, filling and intense by design. If that weight is what you are after, buy paste; it does that better than anything we make.
Brewed cacao is extracted and poured off
We roast the bean and grind it coarse, and you brew it in a press or a drip machine. The grounds stay behind. What reaches the mug is lighter in body and cleaner on the finish, which is what makes it an everyday cup.
Roasted, which is the part that makes it brewable
Roasting is where the flavour that survives hot water comes from. We wrote our own roasting software to hold a profile batch after batch, and every roast is tasted against the standard before it reaches you — which is why the Volta Medium you order in a year will taste like the one you order today.

Can I use Choffy for a cacao ceremony?
You can drink it however you like, but it is not the traditional preparation. Ceremony usually calls for whole cacao paste consumed unstrained. Choffy is roasted, ground and brewed, so the solids are left behind.
Is it raw cacao?
No. We roast it. Roasting is what develops the flavour that makes it brewable like coffee, and it is the step that separates what we make from raw cacao products.
Is anything added?
One ingredient — roasted cacao. There is no alkali treatment, no sweetener and no flavouring, which is why the origin still comes through in the cup.
How strong is it?
Lighter in body than paste, because you are drinking an extraction rather than the whole bean. You can brew it stronger by using more grounds.
Where does your cacao come from?
Four estates - Ecuador, Nigeria, Ivory Coast and Volta - each roasted separately rather than blended, so origin character stays intact.
