A chocolate maker roasts cacao to be ground fine and sweetened. We roast it to be ground coarse and extracted with hot water, which is a different curve and a different target. Our roasting runs on software we wrote ourselves, so the batch you open in March tastes like the one you opened in September.

The grounds stay in the press

Hot water pulls the flavour out and you pour off the liquid, exactly as you do with coffee. That gives you a cup with body but no sludge — dark, clean on the finish, and light enough that a second one is easy.

Pure cacao all the way down

Every batch is sorted and destoned after the roast. That is how we make sure the only thing you drink is cacao. Before a roast goes to market we taste it against the standard until it matches, which is the part nobody sees and the part that decides whether your cup is any good.

What is Choffy Brewed Cacao?

Roasted cacao beans, ground and brewed like coffee. One ingredient — the same bean chocolate is made from, taken as far as the roast and stopped there. No alkali treatment and no sweetener. We have been roasting it this way since 2006.

What does Choffy Brewed Cacao taste like?

Dark, rich and unsweetened — closer to a strong black coffee than to anything sweet. We roast three ways, darkest to lightest. French Roast is the most coffee-like, rich with smoky, aged-wood notes. Dark Roast is bolder, with dried-fruit depth. Medium Roast is softer and gentler. All three are 100% cacao.

How do you brew Choffy Brewed Cacao?

Every way you would brew coffee. Two scoops per cup, water just off the boil, steep and pour — French press, drip machine or pour-over. Use slightly more grounds than you would for coffee, because cacao is less dense.

What is the nutritional information for Choffy Brewed Cacao?

Brewed and unsweetened, a cup is low in calories and carries the flavanols, magnesium and iron that occur naturally in the bean. Nothing is added afterwards. The full detail sits on the Health Benefits page. On the compounds people ask about: cacao carries flavanols — the polyphenol family that includes epicatechin — and theobromine, its own gentle stimulant. Both are water-soluble and carry into the brew. No assay of our cup exists, so there is no figure for either here.

How is Choffy Brewed Cacao different from hot chocolate?

Hot chocolate is made from cacao that has been processed and sweetened, usually with dairy or milk solids blended in. Choffy is the bean itself, roasted and brewed — you drink the extract and leave the grounds behind. Nothing is added, so it is not sweet unless you sweeten it.

Can I use Choffy Brewed Cacao in recipes?

Yes. Brew it and use the liquid anywhere a recipe would use coffee, or use the dry grounds as a rub or a baking ingredient. There is a whole recipe collection on the site.

Which Choffy Brewed Cacao should I start with?

If you drink your coffee black, start with a French roast. If you want something rounder, a Dark roast. If you are not a coffee drinker at all, a Medium roast. And if you would rather not measure anything, the single-serve cups are compatible with Keurig® brewers.
